This dish came out so well it deserved a photoshoot!
A Farinata is made with a light batter made with chickpea flour, looks like a Frittata sounds like a Frittata but it’s not, no eggs 😉👍 it originates in Genoa and is basically a chickpea tart.
1 cup chickpea flour, 2 cups water, 2 tbsp olive oil and salt that’s it and chickpea flour has 20g of protein per 100g!
Earlier in the day I had a stir fry with tempeh, peppers, red onion and wild mushrooms, so I used the rest for the filling of this dish tonight.
Just lay out some baking paper in a dish then spread the filling out evenly.
Pour the chickpea batter evenly out over the filling and leave to stand for about an hour.
Then bake for about 35 mins on 200C or until the top is brown and voila, serve with a salad!
