Pumpkin Protein Pancakes

I received a delivery this week of the delicious natural unflavoured plant protein powders from Clear Spring Pumpkin seed, Hemp and Flaxseed so today I decided to make a new pancake recipe with buckwheat flour from Amisa Organic and the Clear Spring pumpkin protein powder.

Makes 7-8 pancakes

Dry ingredients
100g Buckwheat flour
30g Pumpkin Protein powder
1tbsp baking powder
Generous sprinkle of flakes sea salt

Wet ingredients
250ml non-dairy
1tbsp apple cider vinegar
2tbsp maple syrup

Cook using a medium/hot pan with a bit of coconut oil, it’s time to toss them when the edges brown and you get those little bubbles on top.

Top with coconut yoghurt and blueberry and blackberry compote.
