I’ve had a few clients ask me what I’m eating on the road, so I thought I’d do a little video to show you just how easy eating vegan on the road is. I couldn’t wait to put my new camping stove to the test.
I made a really simple dish, good old heart warming ‘Pasta & Beans’.
I used 1 green pepper, 2 tomatoes, 1 clove of garlic and half a jar of cannelleni beans.
Seasoned with olive oil, black pepper, half a vegetable stock cube and a sprinkling of barbecue fajita seasoning.
I used normal pasta as brown rice and other fancy varieties aren’t really available in these parts. I also don’t have a gluten sensitivity because I eat it very rarely, so occasionally it’s not a problem for me.
